Harriet A. De Salis, in the Preface, says the publication of this cook book was to please the many patronesses of her “A la Mode” series of cookery books who had written to her asking for recipes for foreign dishes. Only a small portion of her large collection of printed materials and manuscripts related to cookery were used in the book, but she offered to give out others for a “directed envelope and twelve stamps to be sent to [her]. The proceeds will be devoted to the education of young necessitous gentlewomen in earning their own living.” Recipes included are from the African continent, America and Canada, South America and Mexico, France, Germany, Greece, Italy, the Orient, Russi, Poland, Siberia, Spain, Portugal, Sweden, Switzerland, Turkey, and West Indian.
